How exactly do you use the spdif connector for guitar? Just a 1/4” to rca adapter?

The pictures show 3 windows, the 2 on the right side are Logic Settings windows - 1 for project settings to change to 48 96 etc and one is general audio settings to set the latency.
The window on the left side is Mac's Audio Set Up window where you manage soundcards and reflects when changes are made in logicLogic seems to actually measure the round-trip not just estimate (I've even had it show different round-trips then show correct after toggling settings as if it calculated longer based on an unseen factor then recalculated correctly)

A Sony Philips Digital Interface is a pipeline and digital - you plug your guitar into a 1/4" jack on a device that has S/PDIF out and use a S/PDIF coax cable to connect one device to the next.
It is an expansion system/port to add more physical analog inputs and route them to the soundcard via digital
But no you can not plug analog cables into digital pipelines with just adapters, sadly enough

That's self-evident. The interface IS the adapter.
It's curious the latency decreased with increased format.

If its reported latency rather than measured, itll show shorter for digital I/O for sure as it ignores converter latency

Using USB out to Presonus AR16 to Alto 312s

I'm using the berhinger umc404HD and was surprised it actually has almost zero latency and sounds half decent for a cheap unit.
I went a step further and plugged in a Behringer Ultra Gain Pro Tube preamp in front of it, and this setup works really well in studio and live.
So imagine with a really nice tube pre in front of your interface. Anyway, many powered speakers will work well, as long as you know what is required to dial in the software for the desired effect. it take some understanding, but once you understand the basic elements on how it all works and the sound you want to achieve, you can use it with almost any other software and speakers, as well as interfaces.
